Ingredients

6 portions
  • 110 grams sugar
  • 2 tablespoons orange juice
  • 2 teaspoons Orange zest
  • 1 tablespoon Cointreau
  • 250 milliliters milk
  • 1/2 vanilla pods, cut
  • 4 eggs, separated
  • 2 tablespoons flour
  • powdered sugar, to sprinkle

Preparation

Preheat the oven to 180 C.
Grease 6 souffle molds with melted butter and sprinkle each mold with sugar to cover the sides.
Put the orange juice and the zest in a small pot over medium-high heat. Let cook for 3-5 minutes, until reduced. It must be quite thick.
Add the Cointreau (orange liqueur) to the orange juice by scraping the base of the pot with a wooden shovel. Let cool.
Put the milk and the vanilla pod (open lengthwise) to boil.
Mix 2 egg yolks and 75 grams of sugar in a bowl. Add the flour.
Remove the vanilla pod from the milk. Put some of the milk in the egg mixture and then add the whole mixture to the milk in the pot.
Beat quickly with the wooden spoon over medium heat until the mixture thickens and boils.
Let boil for 1 minute to cook the flour and move without stopping to prevent it from sinking.
Remove the pot from the heat and add the orange sauce reduction.
Add the other 2 egg yolks. Put a sheet of baking paper to prevent a layer of cream from forming on top.
Meanwhile, whisk the egg whites in a clean container with the blender until they are about to snow. Add the rest of the sugar and beat another 30 seconds.
With enveloping movements mix the egg whites fluffed with the previous mixture. (Do not beat too much to keep the mixture from losing volume).
Divide the mixture in the souffle molds, already greased and sweetened, to the top of the mold. Pass your finger or a knife up so that the top is smooth.
Bake for 12 minutes, until they rise. Serve immediately sprinkled with icing sugar.

TIPS

You can prepare until step 9 with a few hours in advance.
