Lemon Peel with Meringue

This type of lemon pie is filled with a creamy lemon pudding and decorated with meringue, delicious and refreshing!

Ingredients

  • pastry dough
  • 1/2 Cup of sugar
  • 1 tablespoon of lemon zest
  • 6 spoonfuls of Butter
  • 6 egg yolks
  • 3/4 of Cup of egg white
  • 1 Cup of sugar
  • 1/2 Cup of lemon juice

    Preparation

    Pre-cook the dough for the cake at 350 F (190C), chopping the center with a fork, putting a waxed paper on top and filling with beans (to prevent it from becoming deformed). Cook for 25 minutes, remove beans and waxed paper and let cool.
    Mix the sugar, lemon juice, lemon zest and butter in a pan until it boils, stirring with a wooden spoon. Remove the lemon zest (by straining the mixture). Beat the egg yolks with a balloon whisk until they are liquid. Add 1/4 of the yolk mixture to the lemon mixture. Return the mixture to the pan and wait for it to boil. Add the rest of the yolks with a balloon whisk. Continue stirring constantly with the balloon whisk until the mixture thickens and is about to boil. Put the lemon filling in a container and cover with a direct plastic with the mixture (to avoid a cream is formed on top). Refrigerate and reserve.
    Put the lemon mixture on the cake that is baked. Reserve.
    To prepare the meringue, beat the whites with the sugar until the nougat point. Put half the meringue on the cake. Put the rest of the meringue in a dulla and make "peaks" on the meringue, to decorate the cake.
    Cook the cake at 450 F (230 ° C) to brown the meringue.
