The mustachon is a delicious dessert typical of the north of the country, but with this easy recipe we turned it around and presented you with an irresistible mango mustache with coconut cream and mascarpone cheese based on San Juan® Egg Claras, walnuts and crackers . Crispy on the outside and soft on the inside, you will like it as much as we do.

Ingredients

10 portions
  • 1 cup San Juan® Egg White, 250 ml
  • 1 teaspoon cream of tartar
  • 1 teaspoon vanilla essence
  • 1 1/2 cups sugar
  • 2 cups cracker, crushed
  • 3 cups walnut, chopped
  • 2 cups mascarpone cheese, cold
  • 1/2 cups powdered sugar
  • 1/2 cups coconut cream, cold
  • 2 tablespoons lemon zest
  • 5 mangos

Preparation

Preheat the oven to 160 ° C.
Beat the San Juan® Egg Whites and the cream of tartar until firm peaks are obtained, add the vanilla, the sugar little by little and in the form of rain, and beat until it looks shiny and forms peaks.
Add the cookies and nuts in an enveloping way. Pour into a 15 cm diameter baking ring with waxed paper and bake for 1 hour. Let cool and unmold.
For the coconut cream, mix the cold mascarpone cheese, the icing sugar, the cold coconut cream, the lemon zest in a blender and beat for 10 minutes until it doubles in size and has a firm consistency. Refrigerate for 30 minutes.
On a board, cut the mango into very thin half moons and form a flower with the help of your hands, starting from the center outwards.
Cover the surface of the mostachón with the coconut cream and decorate with the handle in a circular shape simulating a flower.
Serve and enjoy.

TIPS

We suggest you put the blender bowl in the refrigerator before making the coconut cream so that it is cold.
