Preparation
Separate the whites from the yolks. Beat the whites until they sponge and add the sugar little by little. Let it beat until it gets firm peaks.
Add the vegetable dye and the blackberry jelly. Beat until no white parts remain.
Pass the mixture to a pastry bag and on a silicone mat or a waxed paper, form the meringue roses. Leave a space of 2 cm between each rose. Bake at 100 ° C for 2 hours.
For the ganache: Heat the cream to beat and pour it over the chocolate sparks. Let stand 3 minutes and then mix until you have a homogeneous mixture.
Pass the ganache to a pastry bag and place it on one of the baked meringues. Put another merengue on top to make a sandwich. Repeat this process until you have all the meringues filled.
