Mexican Caramel Flan

You can't leave this recipe for Mexican caramel flan out of your pastry recipe book. This is a classic inside Mexican cuisine and it'super easy to make! Your whole family with love it!

Ingredients

8 portions
  • 1 cup evaporated milk
  • 1 cup condensed milk
  • 6 eggs, whole
  • 1 teaspoon vanilla extract
  • 6 tablespoons sugar
  • 1 pinch cinnamon powder, optional
  • 1 can half and half cream, (optional)
  • 1 cream cheese, 190 g (optional) (6.7 oz)

Preparation

Preheat the oven to 175 °C (338°F)
Place the sugar in a pot over medium heat until a caramel is formed; pour it before it cools over the custard pan and set aside.
Blend all the ingredients until they are well incorporated, add to the mold when the sugar it's cold and solidified at the bottom of the mold.
Put it in the oven in a bain-marie (inside another mold with some water) and watch that no water enters the flan. If you do not want to brown it, cover it with aluminum foil.
Bake it for 45 minutes at approximately 170 °C (354°F) until you insert a knife and it comes out clean. If at that time you want to brown it, remove the foil and let it brown for 10 minutes. Take it out and let cool. Refrigerate and release from the mold, enjoy it cold.

TIPS

If you want to make a more delicious version, follow all the same steps but add 1 can of half cream and 1 package of Philadelphia cream cheese. It will taste amazing!

la receta tiene 6 cucharadas de azúcar, y los usé en el caramelo primero. aunque olvidé poner azúcar con las leches y huevos antes de ponerlos en los moldes, el resultado era sabroso!

El proceso es fácil y los ingredientes fáciles de conseguir. Lo único es el tiempo que hay que dejar lo en el torno 45 minutos no son suficientes, tardo una hora y media. Pero el resultado valió la pena, me encanto.
