This recipe for Mexican Caramel Flan can not be missing in your pastry recipe book.

Ingredients

8 portions
  • 1 cup evaporated milk
  • 1 cup condensed milk
  • 6 eggs, whole
  • 1 teaspoon vanilla extract
  • 6 tablespoons sugar
  • 1 pinch cinnamon powder, optional
  • 1 can Nestle media creama, (optional)
  • 1 cream cheese, 190 g (optional) (6.7 oz)

Preparation

Preheat the oven to 175 °C (338°F)
Sprinkle the sugar at the bottom of the mold where you are going to cook and burn it over the stove burner, let cool.
Blend all the ingredients until they are incorporated very well, add to the mold when the sugar is cold and solidified in the bottom of the mold.
Put it in the oven in a bain-marie (inside another mold with a little water) take care that no water enters the pudding. If you do not want to brown it, cover it with aluminum foil.
Bake it for 45 minutes at approximately 170 °C (354°F) until you insert a knife and it comes out clean. If at that time you want to brown it remove the foil and let it brown for 10 minutes. Take it out and let cool. Refrigerate and release from the mold, enjoy it cold.

TIPS

If you want to make a more delicious version follow all the same steps but add 1 can of half cream and 1 package of Philadelphia cream cheese, you will make a sensational version. Enjoy.
