A tradition in the state of Michoacán, these Rice Tamales are made with butter, rice flour and raisins. Nowadays there are different versions and it's also known as "rice tamales". Prepare these soft and fluffy homemade tamales, with nuts, pineapple and blueberries. These Tamales are a perfect dish to accompany with a hot atole or a rich pot coffee. Surprise everyone with its sweet flavor.

Ingredients

20 portions
  • enough Water, hot
  • 20 tamal corn husks, (totomoxtle)
  • 7 San Juan® Eggs, at room temperature (5 complete eggs and 2 yolks)
  • 315 grams butter, at room temperature
  • 1 teaspoon liquid vanilla
  • 1 1/2 cups condensed milk
  • 4 cups rice flour, (500 g)
  • 1 cup wheat flour
  • 2 teaspoons baking soda
  • 1/2 tablespoons cinnamon powder
  • to taste walnut, finely chopped
  • to taste Pineapple in syrup, cut into cubes
  • to taste cranberry

Preparation

Soak the husks of tamales in hot water for 15 minutes or until soft. Drain and reserve.
Crack 5 pieces of San Juan® Egg and separate the remaining two pieces in yolks and whites.
In a blender, add the butter, add the vanilla and condensed milk little by little, continue mixing until integrating. Add the 5 complete San Juan® Eggs and the 2 yolks.
Add the powders little by little and beat until integrating, about 5 minutes until the mixture is fluffy.
Place a tablespoon of dough on each corn husk and add the nuts, pineapple and blueberries, close as a tamal.
Place the tamales in a steamer with water and cook for about 40 minutes. Serve accompanied with coffee.
Decorate with cajeta and serve accompanied by pot coffee.

TIPS

You can substitute condensed milk for 1 ¾ cups of brown sugar. Let the tamales rest in the steamer after cooking a few minutes before serving.
