Ingredients

6 servings
  • enough of Meringue
  • 250 grams of puff pastry
  • 150 milliliters of whipping cream
  • 200 grams of cream cheese
  • 100 grams of Butter
  • enough of Strawberry
  • enough of mint
  • 180 grams of San Juan® egg whites for the meringue
  • 250 grams of sugar for the meringue
  • 1 tablespoon of vanilla for the meringue
  • enough of flour of almonds (peeled and ground almonds)

    Preparation

    Preheat the oven to 180 ° (356F)
    FOR THE MERENGUE: In a large bowl gently whisk the egg whites with the vanilla until frothy, about 1 minute.
    In a small pot add the sugar and dip with water, about 3 tablespoons. Heat over medium-high heat stirring until all the sugar dissolves. Then stop stirring and let it boil a couple of minutes. If using a thermometer at 220F / 105C.
    In a pot prepare the bain-marie; Put enough water to cover 3 cm of the bottom and bring to a boil. Pour in a continuous thread over the yolks and beat by hand with a balloon whisk until all the syrup is incorporated.
    Put the bowl over the pot with boiling water and cook in a bain-marie for 5-8 more minutes, always stirring with a round hand mixer. Try to reach the desired consistency (like jam)
    Empty in a clean jar and let cool. Set aside in the refrigerator.
    Soften the butter and cream it together along with the cream cheese. Once these are soft add the cream to beat and 100 grs. of sugar glass. Beat until a homogeneous and firm mixture is formed.
    Spread the dough with a rolling pin until it reaches a thickness of 2 milligrams. Chop all the pasta with a fork and bake until the dough has a light brown color.
    Place a piece of puff pastry and cover with butter cream and cheese, stuffed with strawberries and meringues. Repeat with the other puff pastry and decorate the final leaf with the mint leaves
