This delicious and smooth Cheesecake with red fruits such as raspberry and blackberry, sweetened with honey and a light touch of vanilla essence, on a crunchy base of Sunbites® Snacks Platanitos Dulces with walnut and toasted almond will give you a touch sensational.

Ingredients

12 portions
  • 2 bags Snacks Sunbites® Plátanitos Dulces, (28 gc / u) for the base
  • 1/4 cups walnut, toast, for the base
  • 1/4 cups almond, toast, for the base
  • 1 tablespoon cocoa, for the base
  • 1 tablespoon cinnamon powder, for the base
  • 1/2 cups bitter chocolate, melted, for the base
  • 1/2 cups blackberry, for the cheesecake
  • 1 cup raspberry, for the cheesecake
  • 2 cups cream cheese, for the cheesecake
  • 1/4 cups coconut cream, for the cheesecake
  • 1/4 cups bee honey, for the cheesecake
  • 1 tablespoon liquid vanilla, for the cheesecake
  • 2 envelopes gelatin, (7 grams) hydrated and melted
  • 1/2 cups raspberry, to decorate
  • to taste Fresh mint, to decorate

Preparation

For the base, blend the Sunbite Snacks with Sweet Bananas® together with the nuts, and the almonds until you get a fine powder. Mix in a bowl with cocoa, cinnamon and chocolate. Place the previous mixture in molds for cupcakes and with the help of a spoon flattened forming a base. Refrigerate
For the Cheescake, blend the blackberries with the raspberries, the cheese, the coconut cream, the honey, the vanilla essence and the greenery until you get a smooth mixture.
Pour the previous preparation on the basis of Sunbites® Bananas Dulces Snacks, add a raspberry and freeze 30 minutes or until set.
Unmold the mini cheesecakes and decorate with a little fresh mint leaves, Sunbites® Snacks, Sweet Bananas, a little of the crust.

PRESENTATION

Decorate with a little bit of mint leaves and base of Sunbites® Bananas Dulces Snacks.

TIPS

You can make the base of chocolate, bitter, milk or white. To hydrate the gelatin, use 5 times its weight in water, let stand until a gel forms and melts in the microwave for 5 seconds until you get a liquid again.
