  • 1 cup rice flour
  • 1 cup whole wheat flour
  • 1/2 cups wheat bran

  • 1 egg
  • 1 cup milk
  • 1 lemon
  • 2 yellow apples, cut into squares
  • 1 tablespoon vanilla essence
  • 3/4 cups oil
  • 1 tablespoon cinnamon powder
  • 1 tablespoon nutmeg, ginger, cloves and cinnamon
  • 1/2 cups bee honey
  • 6 tablespoons raw sugar
  • 1 salt
  • 1/2 tablespoons baking soda
  • 1 tablespoon baking soda

Preparation

Preheat the oven to 180ºC.
Sift the rice flour and wholemeal flour in a bowl, add the bran, the spices and mix well. Reserve. Heat the glass of milk and squeeze the lemon and reserve.
In another bowl with the balloon whisk, beat the egg with the honey, the sugar, the apple puree, the milk cup, the oil and the vanilla. Now well blended add the mixture of the flour little by little without overbatting the mixture. Now ready to add the two apples in cubes in an enveloping way.
Fill the muffin molds to 3/4 parts of the mixture to prevent them from spilling and baking for approximately 25 minutes.
Now ready to sprinkle some cinnamon powder to decorate.

PRESENTATION

These muffins can be accompanied in a dinner with friends or family of a delicious cinnamon tea with apple sweetened with honey or stevia.

TIPS

If you do not want to use milk you can add a cup of natural yogurt. You can substitute honey for icing sugar. Children love these muffins.
