Cranberry muffins with mascarpone cheese, exquisite for afternoon tea, breakfast or snack of their children and I assure you that they will be irresistible for the family.

Ingredients

12 portions
  • 130 grams flour
  • 1 tablespoon baking soda
  • 1/2 tablespoons yeast
  • 55 grams brown sugar
  • 50 grams cranberry
  • 1 egg
  • 30 milliliters olive oil
  • 1 tablespoon vanilla extract
  • 250 milliliters natural yogurt
  • 75 grams mascarpone cheese
  • 1 tablespoon sugar

Preparation

In a bowl mix all the dry ingredients (flour, baking soda, yeast and brown sugar), in another all the wet ingredients (eggs, olive oil, vanilla and yogurt).
Preheat the oven to 180 ° C.
Empty the dry mixture in the bowl with the moist mixture and mix everything very well, taking care that no lumps remain and add the whole blueberries.
Mix the mascarpone cheese and the white sugar in a separate bowl.
Fill the muffin pans halfway up so that they rise and place on top 1/2 tsp. of cheese marcapone with sugar.
Take to the oven for 15 min at 180 ° C.
Let cool and ready to enjoy!
