Inspired by a legendary dessert that reminds me of childhood. Specifically to the last day of elementary school, which was when I tried it for the last time.

  • 4 cups Flour for Gamesa® Hot Cakes
  • 3/4 teaspoons baking soda
  • 1/2 cups sugar
  • 1 1/3 cups milk
  • 1/2 cups vegetal oil
  • 2 eggs
  • 1 tablespoon vanilla extract
  • 1 cup blackberry, cut into quarters
  • 1 cup pecan, chopped into cubes about 4 millimeters
  • 1/4 cups pecan, finely chopped (for the crumble)
  • 1/4 cups wheat flour, (for the crumble)
  • 1/3 bars butter, (30 grams) cold and cut in cubes (for the crumble)
  • 2 tablespoons raw sugar, (for the crumble)
  • 18 blackberries, whole (for the presentation)
  • 18 leaves Fresh mint, (to the presentation)


Preheat the oven to 180 ° C.
Mix in a large bowl the sugar, flour and baking soda.
In another bowl, mix the vegetable oil, milk, eggs and vanilla extract with a balloon whisk.
Add the mixture of oil, milk, eggs and vanilla to the bowl of STEP 1. Mix until everything is well integrated and without lumps.
Add chopped blackberries in quarters and chopped walnuts in 4-millimeter cubes. Mix until integrated.
For the crumble: In another bowl mix the mashed sugar, the wheat flour, the cold butter cut into small cubes and the chopped walnut very finely. Mix with your fingers until the consistency is similar to sand.
Grease and flour the muffin molds and fill them up to 4/5 of their capacity. Sprinkle with the crumble mixture and press gently.
Bake for 30 minutes at 180 ° C.
Remove from the oven and allow to cool to room temperature to be able to unmold them.


Place on top of each muffin a whole blackberry and a fresh mint leaf.


1. To avoid having to wash the blackberries it is advisable to buy hydroponic blackberries. 2. Mint leaves should be washed and disinfected, like any green leaf grown on land that is to be consumed raw.
