This is a recipe for fruit muffins crystallized with nuts that we prepare at home several times a year, they are very appreciated for their delicious flavor and they can be kept for many days.

Ingredients

24 portions
  • 150 grams raisin
  • 250 grams fruit, crystallized
  • 250 grams butter
  • 4 eggs
  • 250 grams flour
  • 250 grams sugar
  • 3 teaspoons royal baking powder
  • 100 grams walnut, or chopped almonds
  • 1 glass vermouth
  • 1 glass Rum

Preparation

Preheat the oven. Put to soak the raisins in the rum.
Cut the crystallized fruit into pieces.
Beat the butter with the sugar until acremar.
Add the eggs one by one while stirring and add the flour previously cast with the baking powder.
Drain the raisins and together with the crystallized fruit roll in the flour, add the pasta and add the chopped nut.
Vermouth and milk are added little by little.
Mix the pasta well so that the fruit is distributed.
Spoons of the mixture are put in the red paper cups that are put in the special muffin molds filling them a little more than half. (2 trays for 12).
They are put in the oven and left to cook for approximately 30 minutes. Cooking is checked by inserting a toothpick into the center of the muffin.
They are removed from the oven and allowed to cool.

PRESENTATION

They are ideal for gifts, they can be placed in cellophane bags or transparent domes.

TIPS

If desired you can use 125 gr. of wheat flour and 125 gr. of flour for Gamesa hot cakes. They are stored for many days in sealed containers. If you want you can bathe with rum and save until you consume them.
