Papaya Muffins with Cacahuate

A new option to feed us healthily, and in addition to the most practical. My son loved them, and it is no longer a daily battle to eat healthily. They are easy and delicious.

Ingredients

12 servings
  • 120 grams of Flour for Gamesa® Hot Cakes
  • 100 grams of sugar
  • 1 teaspoonful of baking powder
  • 50 grams of Butter
  • 1 egg
  • 200 grams of papaya
  • 1 green lemon (the juice)
  • 2 spoonfuls of honey
  • 75 grams of peanut
  • 1/4 of Cup of almond

    Preparation

    Preheat the oven to 180ºC.
    Separate the pulp from the papaya and process with the lemon juice. Pull apart.
    In a bowl mix the flour, sugar, baking powder.
    Add the melted butter, egg, honey and papaya mixture to the flour and mix with wooden spoon or spatula.
    Finally add the peanuts. Mix gently.
    Divide the mixture in muffin molds, previously floured or with saucers.
    Bake at 180ºC for 15 to 20 mins. Let cool.
