Preparation
Preheat the oven to 180ºC.
Separate the pulp from the papaya and process with the lemon juice. Pull apart.
In a bowl mix the flour, sugar, baking powder.
Add the melted butter, egg, honey and papaya mixture to the flour and mix with wooden spoon or spatula.
Finally add the peanuts. Mix gently.
Divide the mixture in muffin molds, previously floured or with saucers.
Bake at 180ºC for 15 to 20 mins. Let cool.
