This recipe was my son's idea, it's his favorite flavors and when he started making muffins he told me to make one for him. It went much better than we expected, I hope you enjoy them just like us.

Preparation
Preheat the oven to 180ºC.
In a bowl, mix the flour, sugar, baking powder and ground coconut.
Slowly add the coconut oil, the egg, the milk.
Finally add the pineapple and mix carefully.
Place in molds for floured muffins or with saucers.
Bake at 180ºC for 15-20 mins until golden brown. Let cool.
