A recipe full of flavor and with an incredible texture, ideal for an afternoon of coffee. The secret is to use quality ingredients, such as pure butter, ranch eggs and good rum. The intense flavor is felt in each bite.

Ingredients

8 portions
  • 90 grams butter
  • 125 grams sifted flour
  • 1 teaspoon baking soda
  • 2 eggs
  • 80 grams sugar
  • 1 ounce Rum
  • 80 grams raisin

Preparation

Leave the raisins macerating in a small glass of rum a couple of hours before preparing the recipe.
Preheat the oven to 220ºC.
Grease and flour 8 muffin pans.
Melt the butter and wait until it is warm; Meanwhile, beat eggs with sugar at high speed until they become a spongy and smooth mixture.
Add the tempered butter and continue beating at high speed until fluff.
Slow down to the minimum and add the flour along with the baking powder. Continue beating until everything is well integrated.
Add the raisins with the rum and mix well.
Pour the mixture into the muffin pans almost to the edge.
Lower the oven temperature to 200 degrees centigrade and put the muffins for about 15 minutes. The baking time depends on the oven.
Once browned slightly remove them from the oven and unmold.

TIPS

So that they have a big belly like the one in the photo, it is very important to beat the eggs well, preheat the oven for at least 15 minutes (a little more if it is a cold day).
