Orange Flip in Skillet

Ingredients

6 portions
  • 3 cups flour, for the mass
  • 1 tablespoon baking soda, for the mass
  • 1/2 tablespoons baking soda, for the mass
  • 1 teaspoon salt, for the mass
  • 1 1/4 cups sugar, for the mass
  • 1 teaspoon vanilla essence, for the mass
  • 1 tablespoon Orange zest, for the mass
  • 3 eggs, for the mass
  • 1 1/2 cups whipping cream, for the mass
  • enough orange, medium, 1 to 2 pieces
  • 1/2 cups sugar, for the candy
  • 1/4 cups butter, in small cubes

Preparation

For the dough, place the flour in a bowl: pour it over a strainer and tap to sift it, through the same strainer pass the baking powder, bicarbonate and salt. Mix until the ingredients are integrated.
Add the sugar, the orange essence, the orange zest, the eggs one by one and the whipping cream. Beat with a hand mixer until smooth and uniform. Reservation.
On a board, cut the oranges into slices half a centimeter thick with the help of a knife. Reservation.
In the T-Fal® Hard Titanium Skillet, place the sugar and distribute over the entire surface, heat it over low heat until it forms a lightly golden caramel (approximately 8 minutes). Turn off the flame, and let the caramel cool until warm.
Place the orange slices on the warm caramel close to each other. It is important to note that the caramel should be warm when placing the orange slices, so that when it cools completely, the orange will stick to the bottom of the pan. If you notice that the caramel is no longer warm, reheat the pan for a few minutes. When you finish placing the oranges, let them cool.
Once the orange with the caramel is cold, place the butter cubes on top and distribute it all over the bottom. Then pour in the shake mixture to fill ¾ of the T-Fal® Hard Titanium Skillet. Place on the stove over low heat and cover with a sheet of aluminum foil. Cook the cake for 1 hour. You can rely on placing a wider griddle under the T-Fal® Hard Titanium Skillet so as not to have a direct fire when cooking.
Remove the cake from the heat and let it cool. Flip the cake to remove from the pan. Slice and enjoy.

PRESENTATION

Serve on a platter. Garnish with mint leaves if you wish.

TIPS

You can add a little butter to the caramel, to prevent the oranges from browning.

Puedo utilizar jugo de naranja natural en lugar del concentrado? Si es asi... que cantidad seria aproximadamente?
