Preparation
Place the gelatin in the cold milk for a couple of minutes. Meanwhile, place the orange zest, vanilla and sugar in a saucepan, add 800 ml of cream and simmer for a few minutes.
Remove the gelatin from the milk, heat the milk and when hot, add the gelatin and stir until completely dissolved, then add to the cream, go through a sieve and let cool.
Beat the remaining cream lightly and add to the panna cotta.
Make the caramelized orange. Place the sugar in a saucepan and caramelize, add the Grand Marnier and the orange juice, then add the segmented orange and remove from the heat.
Put a little caramelized orange in individual cups, then the panna cotta cream and finish with a little more caramelized orange.
Place in the refrigerator for at least 5 hours.
