To make a blueberry pancake, just follow these simple steps. What makes this blackberry bread special is the touch that Santa Clara cream and milk gives it, in addition to that it has a delicious glaze with orange and lemon, which helps the pancake to stay moist.

2 portions
  • 3 cups powdered sugar, for frosting
  • 1/8 cups Whole Milk Santa Clara®, for frosting
  • 2 tablespoons lemon zest, for frosting
  • 1 tablespoon orange juice, for frosting
  • 3 cups blueberry, (400 grams) for the pancake
  • 8 tablespoons lemon juice, for the pancake
  • 4 tablespoons cornstarch, for the pancake
  • 4 cups wheat flour, for the pancake
  • 4 teaspoons baking soda, for the pancake
  • 2 cups sugar, for the pancake
  • 4 eggs, for the pancake
  • 2 cups Santa Clara® Cream, for the pancake
  • 1 cup vegetal oil, for the pancake
  • 4 tablespoons vanilla essence, for the pancake
  • 1 pinch salt, for the pancake
  • 4 tablespoons lemon zest, for the pancake
  • enough blueberry, to decorate


Preheat the oven to 180 ° C.
For the glaze, in a bowl mix the glass sugar, milk, lemon zest and orange juice until completely incorporated and obtain a thick glaze. Reserve in a sleeve.
In a bowl, place the blueberries and bathe with the lemon juice; mixture. Right there, hover the corn starch, wheat flour, baking powder, sugar, add the egg, the cream, the oil, the vanilla essence, the salt and the lemon zest. Mix until you get a homogeneous preparation.
Pour the preparation into a greased and floured thread mold, bake for 60 minutes or until it is spongy and cooked; unmold, cool and reserve.
With the help of a sleeve, place the glaze on the cold thread, cut, serve and enjoy.


Serve with the glaze and decorate with more blueberries.


The thicker your glaze, the better consistency it will have so you can cover your pancake.

hola. quisiera saber las medidas y temperatura d e las tortas aquí son para que temperatura. yo vivo a los 995 mts sobre el nivel del mar. vivía en clima frío y ahora en este clima cálido a sido difícil poder modificar mis recetas. Que puedo hacer. si me dieras un consejo te agradecería. gracias
