Preparation
Preheat the oven to 200 ° C.
Grease the mold with a little corn oil.
In a bowl, mix the flour, 1 cup of oats, cereal, nutmeg, baking powder, baking soda and salt. Reserve.
In another bowl beat the eggs and sugar with an electric mixer . Add soy milk, oil, vinegar and almond extract. Add the dry ingredients and stir until moist. Add the sliced almonds and mix in an enveloping way.
Pour the mixture into the previously greased mold, sprinkle with the remaining oatmeal and arrange the whole almonds on top.
Bake 45 to 50 minutes or until a toothpick inserted in the center comes out clean. Remove the pancake from the oven, unmold and let cool.
To serve.
