This pancake is perfect for those days in which you are left wanting a dessert, but with this recipe you will not have to feel guilty since it is very low in fat. Besides being very simple and easy to prepare. Enjoy it.

Ingredients

10 portions
  • 1 cup canola oil
  • 1 cup wheat flour
  • 1 cup carrot, grated
  • 1/2 cups walnut, chopped
  • 1 tablespoon vanilla extract
  • 1 tablespoon cinnamon
  • 1/4 tablespoons salt
  • 1 teaspoon baking soda
  • 3/4 cups brown sugar
  • 2 eggs

Preparation

Preheat oven to 180 degrees.
Beat the eggs until obtaining a homogeneous consistency.
Pour the oil at the same time that you keep beating slowly.
Once the eggs and oil are scrambled, empty the flour cup and continue beating.
In the same way add the sugar, cinnamon, salt and baking powder.
Finally, as the last ingredients have dissolved, add the carrot and then the chopped nuts.
Stir in a wrapper until all ingredients are fully incorporated.
In a previously greased mold, either round, threaded or whatever you like, empty the mixture.
Bake in the oven for 30 min or until a toothpick is inserted and removed, it comes out clean.

TIPS

For this recipe it is not necessary to turn on your hand blender , with a balloon or beater will suffice.

Seguí el procedimiento y, hasta que metí el pastel al horno, noté que no se indica el momento de añadir la vainilla. Espero que no comprometa el sabor :(
