Traditional recipe of the Oma (my grandmother). Its smells and tastes remind me of the best moments.


10 portions
  • 300 grams honey
  • 250 grams sugar
  • 500 grams flour
  • 3 eggs
  • 2 teaspoons baking soda
  • 1 pinch salt
  • 1 teaspoon cinnamon, milled
  • 1 tablespoon ground clove
  • 1 teaspoon ground cardamom
  • 1/8 liters milk


Preheat oven to 180 degrees
In a pot or fire-resistant bowl put honey and sugar to heat on the stove to form a kind of caramel. The two ingredients must be very well melted and incorporated. Turn off and let cool a little
Sift the baking powder together with the flour and salt in a separate bowl.
Beat the eggs together with the milk using a balloon in another container.
Incorporate alternately flour and egg mixture to the mixture of honey and sugar. Until forming a uniform mass.
Add the spices and stir again until they are perfectly incorporated.
Grease a large pancake mold (preferably silicone). Or one Teflon. Lining it with baking paper and greasing it also works.
Fill the mold about 3/4 of its capacity or less as the dough will rise and put in the oven for about 1 hour.


It can be garnished with peeled almonds in the shape of a flower or arranged around the surface of the cake and leaves of mint or mint.


This pancake has a less spongy consistency. It is more like a bread. It can be served warm. Spread with butter and accompanied by a delicious tea in the snack tastes delicious. If a more intense flavor is desired, it is only necessary to increase the amount of spices.
