Ingredients

  • 1/2 Cup of Butter
  • 1/2 Cup of sugar plus 2 tablespoons of sugar
  • 1/2 Cup of flour plus 2 tablespoons of flour
  • 2 pieces of egg
  • 1/2 Cup of milk
  • 1/4 of Cup of cranberry dehydrated
  • 7 pieces of egg white (for the Italian meringue)
  • 1 Cup of sugar (for the Italian meringue)
  • 3/4 of Cup of Water (for the Italian meringue)

    Preparation

    Preheat the oven to 200 ° C.
    Add the butter and sugar to a bowl. Beat at high speed until the mixture softens. Once the preparation is acremada (it will have a paler color), add the eggs one by one, reduce the speed, since we only want the eggs to be integrated.
    Incorporate milk and flour, alternating them. Try not to beat more so that the mixture is not cut. Finally, it incorporates blueberries.
    Grease and flour a mold, add the preparation and bake for about 30 minutes. Once cooked, unmold it and allow it to cool.
    For the Italian merengue: Place the sugar in a pan and cover with water, heat the preparation at medium temperature, it is important not to move the mixture.
    Beat the egg whites at high speed until they are double in size and firm.
    When the caramel forms large, slow bubbles, it is ready. Incorporate it in the form of thread to the bowl with the egg whites, without stopping to beat.
    To decorate: add the meringue on top of the pancake, decorate with fruit and mint.
