Delicious healthy pancake, based on wholemeal flour with delicious mamey that will make it moist and fluffy ideal if you have a sweet craving and want to take advantage of the mamey season. When you leave the oven the aroma will be irresistible.

Ingredients

6 servings
  • 1 2/3 cups of whole wheat flours
  • 3/4 of Cup of oatmeal flour
  • 5 spoonfuls of flaxseed
  • 2 teaspoons of baking powder
  • 1 tablespoon of ground cinnamon
  • 1/2 Cup of brown sugar
  • 1 piece of egg
  • 1 Cup of skim milk
  • 1/4 of Cup of sunflower oil
  • 1 teaspoonful of vanilla essence
  • 1 piece of mamey 1 piece mamey peeled and pitted and diced (pulp only)
  • 2 spoonfuls of Orange zest
  • 1/4 of Cup of macadamia nut chopped to cover

    Preparation

    Preheat the oven to 180 ° C
    In a bowl mix the whole wheat flour with oatmeal, flaxseed, baking powder, cinnamon powder and sugar. Reserve the dry ingredients.
    Beat the eggs, with the milk, oil and vanilla until perfectly incorporated and beat 2 more minutes.
    Add the dry ingredients little by little to the blender, add the mamey and the orange zest, mix well to achieve a homogeneous mixture.
    Serve the mixture in a small greased and floured mold. Add the macadamia nut cover. Hit the mold 3 times to let the air out. Bake for 20 to 25 minutes.
    Remove from the oven and rest the pancake for 5 minutes, sprinkle with sugar glass serve and enjoy.

    PRESENTATION

    Serve the pancake, sprinkle with a little icing sugar and more macadamia nut. Always sift or pass the flour through a fine sieve to avoid groups in your pastries or sweet preparations.
