A delicious pineapple pancake with coconut, this dessert reminds me a lot of the trips that my family and I have made to the beach.

Ingredients

8 portions
  • 1 cup coconut
  • 1/2 cups Gloria® butter without salt
  • 1 1/2 cups flour
  • 1/2 teaspoons baking soda
  • 1/2 cups sugar
  • 1/2 cups brown sugar
  • 3 eggs
  • 1 cup Pineapple in syrup
  • 1/4 teaspoons salt
  • 1 teaspoon liquid vanilla
  • 1 cup sour cream
  • 1/2 teaspoons ground ginger

Preparation

Mix flour, baking powder, salt and ginger.
Add to another bowl the sugar and butter, once they change color, incorporate the eggs (piece by piece). Add the vanilla extract, continue whisking.
Add dry ingredients to this mixture, little by little until they are well mixed.
Add the sour cream, the pieces of pineapple and the grated coconut. Once everything is well integrated, turn off the blender .
Place this mixture in a previously greased and floured mold. Sprinkle coconut on the surface and cook at 180 ° C for 35 minutes.

PRESENTATION

Sprinkle a little grated.

TIPS

You can present it with roasted pineapple. Cut thin slices of pineapple, sprinkle cinnamon and sugar. Hold until they are satisfied.
