Preparation
Mix flour, baking powder, salt and ginger.
Add to another bowl the sugar and butter, once they change color, incorporate the eggs (piece by piece). Add the vanilla extract, continue whisking.
Add dry ingredients to this mixture, little by little until they are well mixed.
Add the sour cream, the pieces of pineapple and the grated coconut. Once everything is well integrated, turn off the blender .
Place this mixture in a previously greased and floured mold. Sprinkle coconut on the surface and cook at 180 ° C for 35 minutes.
