Ingredients

4 portions
  • 2 eggs
  • 1 cup sugar
  • 1 teaspoon liquid vanilla
  • 1/2 cups oil
  • 1 cup flour, sifted
  • 1 pinch salt
  • 1 teaspoon baking soda, sifting
  • 1/2 teaspoons baking soda, sifting
  • 1 teaspoon cinnamon
  • 2 cups zucchini, grated

Preparation

Preheat the oven to 200ºC.
Flour the pancake mold and set aside.
Beat the eggs, add the sugar and vanilla.
Continue beating until it takes a pale yellow color and add the oil little by little.
Mix all the dry ingredients, add the mixture of the eggs and grind the zucchini and integrate them.
Pour the mixture into the mold and bake for 1 hour.
