Do not forget to prepare this classic of the Hungarian pastry, also known as "Dobos Torte" is made with soft vanilla biscuits with a chocolate bitumen and a spectacular presentation of caramel. You can not let it go!

Ingredients

  • 9 pieces of egg white
  • 3/4 of Cup of sugar
  • 8 pieces of yolk
  • 1/4 of Cup of milk
  • 1 teaspoonful of lemon zest
  • 1 teaspoonful of Salt
  • 1 1/2 cups of flour
  • 1 teaspoonful of vanilla
  • 1 1/3 cups of Butter for the filling (at room temperature)
  • 1 1/3 cups of sugar glass sifted
  • 120 grams of chocolate for bitumen
  • 1 teaspoonful of vanilla for bitumen
  • 1 Cup of brown sugar for bitumen
  • 3 spoonfuls of Orange juice for bitumen

    Preparation

    Preheat the oven to 180 ° C.
    Beat the whites with the sugar until firm peaks form. Reservation.
    Beat the yolks, until they change color, add little by little the milk, the lemon zest, the salt, the flour and the vanilla essence.
    Add to the previous preparation the whites and mix in an enveloping way.
    Divide the mixture into four baking pans with waxed paper and bake for 10 minutes. Let cool, using a cutter cut 15 cm diameter discs. Reservation.
    For the bitumen, beat the butter with the icing sugar, add the bitter chocolate and the vanilla essence.
    On a rotating base place a cake disk, with the help of a spatula add a little filling without reaching the edge, place another cake disk until you have several floors. Reserve one of the biscuit discs.
    With the rest of the bitumen, cover the cake completely and refrigerate.
    For the caramel, heat a Hard Titanium + T-fal® Skillet over medium heat and when the red dot (Thermo-spot) is completely red, add the sugar and orange juice. Cook until it forms a caramel, without moving too much.
    Cut out the sponge cake that you reserved in triangles and cover with the caramel, let it dry and decorate the cake with the triangles of sponge cake and caramel.

    PRESENTATION

    On a cake base accompanied by an infusion of lavender.

    TIPS

    Do not move the candy otherwise it will crystallize.
