This rich Peach Pie is prepared with a base of delicious dough, the richest thing is to enjoy it warm just out of the oven with a ball of vanilla ice cream.

Preparation
For the dough: In a food processor mix the flour, with the sugar, the pinch of salt, and the butter until it looks like a crumbly dough.
Add vinegar and cold water and combine quickly (only 4 times). Place the dough on a clean surface and knead lightly (you should still see pieces of butter).
Cover the dough with plastic wrap and refrigerate for at least 1 hour before using for the pay.
For the filling: In a bowl combine the peaches with the brown sugar, lemon, vanilla, cinnamon, mozuelo nut, salt and 4 tablespoons of butter. Place in a food processor and mix lightly, remove.
For the pay: Divide the dough in two and with a roller flatten the first half to make a circle. Place a 20cm pie baking dish allowing the dough to hang on the sides.
Place the filling in the base. Now take the second half of the dough and with a rolling pin make a circle of the same size. Cut with a sharp knife strips or if you prefer you can place the whole circle on the pay.
With your hands, close the pie on the sides by joining both masses and place aluminum foil on the sides to avoid burning when baking.
Preheat the oven to 200 degrees centigrade and bake the pie for 30 minutes.
Remove the foil and sprinkle with a little brown sugar, bake for 30 more minutes or until lightly browned.
Allow it to cool before cutting.
