Ingredients

10 portions
  • 2/3 cups unsalted butter, cool
  • 6 tablespoons vegetable shortening, cool
  • 2 2/3 cups flour
  • 2 tablespoons sugar
  • 1/2 tablespoons salt
  • 1/2 cups Water, frost
  • 1 1/4 kilos green apple
  • 1 tablespoon lemon juice
  • 2 tablespoons unsalted butter, melted
  • 1/4 cups brown sugar
  • 1 1/2 teaspoons cinnamon
  • 1 1/8 teaspoons walnut, nutmeg
  • 1 egg, shake with 2 tablespoons of whipping cream
  • 1 tablespoon sugar, mixed with 1/4 teaspoon of cinnamon

Preparation

Cut the butter and butter into 2 cm pieces.
In a food processor, mix the flour, sugar, and salt. Press 2-3 times to mix. Add the butter and butter and press 8-10 times until a separate dough forms. Add the ice water and press 10-12 times until it is incorporated a little (you should not form a ball).
Take the dough and on a floured surface, form two discs with the dough (about 12 cm). Wrap in egapack and go to the refrigerator between 1 hour and 1 night.
Preheat the oven to 200 degrees and put the oven rack down.
Peel and remove the heart of the apples. Cut into 6 mm thick slices. In a bowl mix with 1 tablespoon of lemon juice, 2 tablespoons of melted butter, brown sugar, cinnamon and nutmeg. Stir.
Remove the dough from the refrigerator and knead to form 2 circles about 23 cms. Put the dough on the pie pan and with your fingers flatten it a bit so that it is just right to the mold.
Put the mixture of apples on top and arrange.
Put the other layer of the flattened dough on top of the apples and cut what comes out over the pie pan.
With the fingers, form the edges of the pie so that it has a wavy shape.
Coat with the egg and cream mixture and make a couple of holes with a knife in the center so that steam can escape.
Sprinkle the pie with the cinnamon sugar and bake for 15 minutes.
Reduce the temperature to 180 degrees and continue cooking until golden brown, about 40-45 minutes.
Remove from the oven and let cool on a rack for 20 minutes.

PRESENTATION

Serve hot with vanilla ice cream.

si no tienes el procesador utiliza un tenedor hasta que incorpores bien la mantequilla y la manteca con la harina. si puedes eguir trabajando con el tenedor y los demas ingredientes hazlo asi. de lo cotrario utiliza tus manos, sobre una superficie ya sea de marmol, granito o una mesa de vidrio. para conservar el frio

Es la mejor receta de pay de manzana Esta es la mejor receta de pay de manzana que veo publicada en cualquier sitio. Es super parecida a la receta que mi madre ha hecho por años, y siempre tiene el mismo exito. Gracias por compartirla.
