  • 40 grams margarine
  • 150 grams Oreo cookie
  • 2 egg yolks
  • 40 grams powdered sugar
  • 250 grams cream cheese
  • 100 grams Irish cream liqueur, Carolans
  • 2 teaspoons jelly, leaf
  • 1 teaspoon Orange zest
  • 225 grams cream, double (rich in fat)
  • 50 grams dark chocolate, with 70% cocoa


Base of the pie: Melt the butter in a small skillet over low heat.
Grind the cookies in a bag with a rolling pin until crumbs are left, not too thin.
Mix the butter with the crumbs, making sure that it covers them well.
Place a 20 m (8 inch) screw mold or six individual molds on a flat cooking pan.
Empty the crumbs in the molds with butter with the help of a spoon, so that they form a base, and let cool in the refrigerator.
Stuffing the pie: Put the yolks in a bowl to mix medium, add the sugar and mix with a whisk until it thickens.
The mixture should reach a ribbon point, so that it maintains its shape, and should have a clear tone and a smooth texture.
In another bowl, beat the cheese until smooth, add the egg mixture and Irish cream Carolans, and mix until softened.
In a dish cover the gelatin with hot water. Let soak for a few minutes until softened, then strain and put in a pan with 30 ml of water.
Heat over low heat and mix until dissolved. Allow to cool and then beat together with the cheese mixture. Add the orange zest.
Beat the double cream until it is as smooth as possible and incorporate. Pour the mixture on the base of the pie and let cool for an hour and a half.
