There are never enough recipes to make cheesecake, so go ahead and prepare this New York-style cheesecake, which has a strawberry topping and a chocolate ganache. The ganache is a usual preparation in some desserts, which is made with cream or whipping cream and chocolate, so it is the perfect coating. Ingredients

  • 2 cups cookie, ground for the base
  • 1 cup butter, melted for the base 250 ml
  • 3 cups cream cheese, at room temperature (or 3 packages of 190 g)
  • 1/2 cups sour cream, 225 g
  • 1/2 cups whipping cream, 250 g
  • 4 eggs
  • 3/4 cups sugar, 150 g
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla essence
  • 2 cups strawberry, for coverage
  • 1 cup sugar, for coverage 200 g
  • 1 raja cinnamon, for coverage
  • 1 Orange zest, for coverage
  • 1 cup sour cream, for coverage 225 g
  • 1 on gelatin, hydrated for coverage
  • 1/2 cups whipping cream, for the ganache 113 g
  • 1 cup dark chocolate, for the ganache 170 g

Preparation

For the base, mix the ground cookies with the butter, place on a cake base and press to compact. Reservation.
For the cheesecake, beat the cream cheese with the sour cream, the whipping cream, the eggs, the sugar, the cornstarch and the vanilla essence, until incorporated.
Pour the cheesecake mixture over the cookie base and bake for 1 hour, at 180 ° C. Let cool and reserve.
For the strawberry topping, in a pot over medium heat cook the strawberries with the sugar, cinnamon and orange zest until it has the consistency of marmalade. Remove the cinnamon sticks and add the sour cream. Blend, add the gelatin in the form of a thread and then pour this mixture over the cheeesecake. Refrigerate until set.
For the ganache, heat the whipping cream, add the dark chocolate until it melts, remove from the heat.
Unmold the cheesecake and with the help of a spoon add the ganache, decorate with strawberries and chocolate shavings.
Garnish with strawberries and chocolate shavings.

PRESENTATION

Garnish with dark chocolate shavings.

TIPS

Once the cheesecake is in the oven, do not open the door, otherwise it may collapse.
