This rich cold peach pie is prepared with a delicious dough base, the richest thing is to enjoy it warm just out of the oven with a ball of vanilla ice cream.

Preparation
For the filling: In a bowl combine the peaches with brown sugar, lemon, vanilla, cinnamon, mozuelo nut, salt, vanilla ice cream and 4 tablespoons of butter. Place in a food processor and mix lightly, remove.
Place the filling in the cookie base and put slices of peach on top.
Preheat the oven to 200 degrees centigrade and bake the pie for 30 minutes.
Remove the foil and sprinkle with a little brown sugar, bake for 30 more minutes or until lightly browned.
Allow to cool and put in the refrigerator to serve cold.
