12 portions
  • 1 cup whole milk
  • 250 grams Philadelphia® cream cheese
  • 60 grams butter
  • 6 eggs, separated clear and yolks
  • 3/4 cups sugar, or to taste
  • 1/4 tablespoons lemon juice
  • 1 lemon, zest
  • 1/4 cups cornstarch
  • 3/4 cups wheat flour

Preheat the oven to 200 ° C. In a bowl put the milk to heat, do not boil, just warm a little. Add the cream cheese and butter, stir until the cream cheese melts and dissolves in the milk. When everything is well incorporated, let it cool completely and add the 6 egg yolks. Be careful not to overheat the milk because otherwise you will cook the yolks when you add them.
Separate in another bowl, mix flour and corn starch. Add little by little the mixture we made with the cream cheese and stir everything well. Mix everything well until there are no lumps.
Beat lightly for about 2 minutes. Add the lemon juice and the zest, and beat for about 5 more minutes. Add the sugar and beat until the whites are about to nougat and peaks form.
With the help of a spatula mix the whites with the mixture we made with cream cheese in the form of folds. Do not mix a lot, just integrate the ingredients.
Put the mixture in a baking dish (previously greased or with baking paper). You put an aluminum foil on it, and bake it in a bain-marie for approximately 50 to 60 minutes. If you want it golden, when you go half the time remove the aluminum foil from the pie so that the top of the pie is browned.
Test if it is ready with the help of a toothpick or a knife. When the pie is ready, turn off the oven and let the pie sit in the oven with the door open for another 10 minutes. Remove the pie from the oven and allow it to cool to room temperature. Put it in the refrigerator at least 2 hours before serving. Ready!

You can decorate it with strawberries and whipped cream, or the fruit of your choice.

If you want it brown, when you go half the time remove the aluminum foil from the pie so that the top part is golden brown.
