Ingredients

8 portions
  • 4 egg yolks
  • 1/3 cups cornstarch
  • 1 1/2 cups Water
  • 1/4 teaspoons salt
  • 1 1/2 cups sugar
  • 3 tablespoons butter
  • 1/2 cups lemon juice
  • 1 tablespoon lemon zest
  • 1 pay crust
  • 4 egg whites, (for the meringue)
  • 1 pinch cream of tartar, (for the meringue)
  • 2 tablespoons sugar, (for the meringue)

Preparation

Preheat the oven to 180 degrees centigrade.
In a deep bowl beat the egg yolks.
In a saucepan mix the cornstarch, water, sugar and salt with a balloon whisk.
Place over medium heat and continue mixing until it boils. Let it boil 1 minute.
Remove from heat and add the yolks, beating with the balloon beater quickly and incorporating.
Return the mixture to a low heat and heat for 1 minute. Remove from heat and add butter, juice and lemon zest and mix well.
Pour the filling into the base for pay.
Beat the egg whites with the cream of tartar with an electric mixer until peaks form. Add the sugar and beat a couple of minutes more.
Place the meringue on the filling of the pay covering the entire pay.
Bake the pie for 10-12 minutes or until the meringue has browned.
Remove the pie from the oven and allow it to cool before serving.
