A rich and refreshing peach mouse that is easy to make since it bears canned peaches.

Ingredients

4 portions
  • 4 eggs
  • 1/2 cups natural yogurt
  • 8 peaches in syrup
  • 1/2 cups sugar
  • 1/3 cups Water
  • leaves peppermint, to decorate

Preparation

In a food processor grind 6 of the 8 peaches until you have a puree. Slice the other peaches into thin slices.
In a bowl beat the yolks with the sugar, add the water and continue whisking.
Cook the yolks in a bain-marie for 10 minutes and continue beating, the yolks will become somewhat thick. Get out of the fire.
Mix the yolks with the processed peach and yogurt.
Pour the mouse into martini glasses and decorate with slices of peach, refrigerate for at least 90 minutes before serving.

PRESENTATION

Decorate the glasses with mint leaves before serving.

TIPS

This same recipe can be made with tin handles.
