Preparation

Put the butter in a container and start to work it until it is acremada. Add flour little by little and continue kneading. Add a pinch of cinnamon and nutmeg, at the end add half the egg and continue kneading until there is a mixture that does not stick on the hands and easily moldable.
Preheat the oven to 120º Celsius, take the 2/3 parts of the dough (save the remaining third) and spread it with a rolling pin, if it is very brittle you can use a piece of plastic to spread it, now put it in the mold and bake 20 minutes, this is so that the dough to cook takes consistency and will not get soaked when we put the filling.
In a hot pan melt 3 tablespoons of butter and sauté the peaches previously sliced ​​in half moons, add 3 tablespoons of sugar, a pinch of cinnamon, and a pinch of nutmeg, sauté for 2 or 3 minutes, the goal is to release a little juice. Then drain them. Incorporate them inside the already baked base.
With the remaining third of the dough spread and cover the cake, trying to cover the ends of the mold. Use half of the remaining egg to varnish the cake on top, sprinkle sugar on top (this is so that it is golden brown on top). Now with a knife make some holes about 1 cm to prevent it from breaking when baked.
Bake the cake for approximately 30 minutes at 110 degrees Celsius. Remove it from the oven and let it cool.
