Preparation
Dough: Sift the flour with the salt on a wax paper.
Place the butter and yolk in the processor and beat until the dough is smooth.
Add water and mix again. Add the flour and sugar, and mix in steps until everything is united.
Pass to a lightly floured surface and knead gently until smooth.
Wrap in plastic and refrigerate for 30 minutes before rolling.
Preheat the oven to 180ºC.
Line the dough with the dough and cover with aluminum and beans.
Bake in white until it begins to brown. Remove the aluminum and beans and bake 20 more minutes.
Filling: Mix cheese, cream, thyme and sugar and transfer to the mold. Bake 20 minutes. Cool.
At the end, add the plums and serve at room temperature.
