This dessert of pears with chocolate sauce really looks spectacular. The combination of the pears and their chocolate sauce is very good.

Ingredients

4 portions
  • 4 pears
  • 4 cups Water
  • 3/4 cups dry white wine
  • 1/3 cups brown sugar
  • 1 branch liquid vanilla
  • 6 ounces bittersweet chocolate

Preparation

Peel the pears and remove the heart (from below) so that they look pretty.
Cut a piece of baking paper the size of the pot in which the pears are going to be cooked.
Put the pears in the pot, along with the water, brown sugar wine, and the vanilla seeds and their twig.
Wait for it to boil over medium-high heat and reduce the heat a little.
Cover the pears with the round baking paper.
Occasionally turn the pears over so that they are covered in the liquid, until they are very soft, between 10 and 15 minutes.
Pass the pears to a bowl, remove the vanilla sprig and reserve.
Cut the chocolate into small pieces and put in a bowl.
Return the liquid in which the pears were cooked in the high heat until it reduces and has the consistency of a light honey.
Take a cup of the reduced liquid and add it to the chocolate. Stir well.
Put the melted chocolate on half of each pear and refrigerate, covered with baking paper, until it cools.

PRESENTATION

To serve, put a pear on a dessert plate and put a little more chocolate on top (on one side). Serve with a cookie and some whipped cream.

TIPS

Choose pears that are firm but in point. If the chocolate gets too hard, add a little more of the liquid in which the pears were cooked.
