These rich puff pastry rolls are filled with pistachio, sugar and cinnamon. This same recipe can be done by trying different fillings.

Preparation
In a deep bowl whisk egg yolks and water.
In another bowl combine sugar and cinnamon.
Place the puff pastry on a clean surface with flour and cut two 20 cm squares.
Cover the two square with the egg mixture and sprinkle with 2 tablespoons of the sugar mixture.
Sprinkle pistachio on 1 square leaving one edge and cover with the other square, press to seal both squares and cover the upper square with butter and the remaining sugar mixture.
Cut into strips 2 cm wide and roll up the strips so that they are as in the photograph. Place them in a greased baking tray.
Bake for 20 minutes at 200 degrees centigrade or until golden brown. Remove from the oven and allow to cool.
