Preparation
Mix the flour with a pinch of salt.
Add the butter (cold) in cubes. Knead lightly to form lumps.
Add 5 tablespoons of cold water little by little, just kneading to form a dough (it should be slightly moist, not too much).
Flatten the dough and cover the individual molds with this dough, refrigerate for 15 minutes.
Remove from the refrigerator and bake for 10 minutes or until the dough looks slightly golden brown. Let cool.
Blend the cream, a pinch of salt, a pinch of pepper, eggs, cheeses.
Add this mixture to the cakes.
Slice the pears finely and place them on the cakes.
Bake at 180 ° C for 10 more minutes or until the filling looks solid and when hitting the molds it will no longer move.
