Ingredients

15 portions
  • 2 1/2 cups flour
  • 3 tablespoons cocoa
  • 1 teaspoon baking soda
  • 1 teaspoon baking soda, royal
  • 1/2 teaspoons salt
  • 1 1/2 cups sugar
  • 6 tablespoons unsalted butter
  • 2 eggs
  • 1 1/4 cups milk, with a few drops of lemon
  • 1 1/2 teaspoons white vinegar
  • 1 1/2 teaspoons vanilla extract
  • 2 tablespoons red food coloring
  • 5 tablespoons butter, for cream cheese frosting
  • 4 teaspoons milk, for cream cheese frosting
  • 1 package cream cheese, for frosting
  • 1 cup powdered sugar, for cream cheese frosting
  • 1 1/4 teaspoons vanilla essence, for cream cheese frosting

Preparation

Preheat the oven to 350F or 180 centigrade.
Line 30 cupcakes with paper baking cups in a muffin or cupcake pan
Mix the flour with the cocoa, baking soda, baking powder royal, and salt in a medium bowl. Stir with a balloon whisk to incorporate the ingredients.
Put the sugar and butter (previously softened in the microwave) in blender and beat on medium speed for 3 minutes. Add the eggs, one by one, mixing well after each addition. Add the flour mixture, the vinegar and 1 1/4 cups of milk (with its lemon drops), alternating between the flour and the milk, finishing with the flour. Add vanilla and red coloring, mix well.
Pour the mixture into the cupcakes and bake for 20 minutes until a toothpick comes out clean when inserted in the center. Let cool on a rack for 10 minutes.
To prepare the cream cheese frosting, mix in a blender 5 tablespoons of soft butter (you can soften it in the micro), 4 tablespoons of milk (with its lemon drops), and cream cheese. Beat at high speed until fluffy. Gradually add the powdered sugar and beat until the mixture is soft. Add the vanilla and stir well.
Frost the previously baked cupcakes and enjoy.

TIPS

For a light version, you can use nonfat milk and each cupcake will only have 205 calories per serving.

Hola Eszmee le puedes agregar el jugo de medio limón esto solo se utiliza para intensificar el color del pastel.Saludos :D
