  • 500 grams flour
  • 400 grams lard
  • 125 grams powdered sugar
  • 1 egg yolk
  • 1 egg


To begin with, if we do not have cooked lard, we will put the butter in a saucepan until it starts to boil. Just start to boil away from the fire, remove the layer of foam that we have left on the surface and let cool.
We already have the cold butter. We beat it and add the icing sugar and the yolk. We add everything and add the flour (previously sieved). We knead well.
The dough is ready. Cover with a bit of flour the table or counter where we go to stretch the dough and work a little with your hands before stretching it. We stretch it with the help of a kitchen roll or with a bottle (traditional method) and leave it with a thickness of 1 cm more or less. It is a mass that breaks easily, so if we leave it thinner it will be hard for us to handle it.
We preheat the oven to 180ºC. We are cutting the dough with the cortapastas. Here I have to advise you not to compile using cutters with figures that have very thin parts because as I said before, the pasta breaks easily. I tried it with cutters in the shape of a dummy, bear, hand and others, having to pass them because I barely managed to get a couple of figures. In the end use the round of all life.
When we have the cut masses, we place them on the oven tray, paint them with eggs and bake them. If we use an oven that does not have a fan, we will place the tray in the middle, heat up and down at 180ºC for 15 - 20 minutes. If we use an oven with a fan, we do the same but the temperature should be at 150ºC. When they begin to brown, the sighs will be ready. When they have 15 minutes in the oven we can take one (care that they burn a lot), we break it as they are and we calculate if it still lacks time. In my oven with fan in 20 minutes they are perfect.
It's already the baked sighs. Just do not let them cool and then sprinkle with icing sugar. They will leave around 40 sighs. If we want to keep them for a while we will put them in a can (the typical of tea or Danish pastries, those that once gave you when you were bad and you visited some friend of your grandmother) and we They will endure a few days until they run out.
