These cookies also known as soletas are used in different desserts such as tiramisu.

Ingredients

10 portions
  • 1 cup flour
  • 4 eggs
  • 1/2 cups powdered sugar, or fine granulated sugar
  • 1 teaspoon liquid vanilla
  • 1/8 teaspoons cream of tartar
  • 1/4 cups powdered sugar

Preparation

Beat the yolks, half the sugar and vanilla to pale and fluffy
Beat the egg whites with the cream and the rest of the sugar to the point of soft nougat.
Incorporate the yolks to the whites wrapping together with the flour in the form of rain with a strainer.
Put in a duya with round beak (from number 9 Ateco)
Put on baking paper of the desired shape and sprinkle with icing sugar.
Bake between 10 and 12 minutes.

Muy buena receta, solo que no encontré el cremor tártaro y lo sustituí por polvo para hornear y me quedaron bien las galletas
