Ingredients

4 portions
  • 200 grams strawberry
  • 4 eggs
  • 1 lemon
  • 80 grams powdered sugar
  • cocoa powder, to decorate

Preparation

Wash strawberries and lemon. Remove the leaves from the strawberries and cut them into pieces. Grate the skin of half a lemon, without reaching the white part. Grind the strawberries. Measure 125ml of the crushed strawberries and reserve the rest of the shake in the refrigerator.
Separate the whites from the yolks. Then put half of the yolks in one bowl and reserve the other two in the refrigerator for another preparation. Beat the yolks with the strawberry puree, a teaspoon of grated lemon peel and two tablespoons of icing sugar.
Assemble the egg whites until stiff with the rest of the sugar (add a pinch of salt), mix delicately with the rest of the strawberry shake, spread in the molds and cook for 10 minutes in the middle of the oven, preheated to 200º Celsius.
At the time of serving, sprinkle with a little cocoa powder or icing sugar.
