This recipe is super easy to prepare the paste for sweet cakes. It will serve you for many different desserts, such as a Pay de Nuez or Tart of Raspberries. If you want a crunchier pasta, the Pasta Briseé recipe for Pays would be more suitable.

Ingredients

12 portions
  • 1/2 bars butter
  • 1/8 teaspoons salt
  • 1/4 teaspoons baking soda
  • 3 tablespoons sugar
  • 1 1/4 cups flour
  • 1 egg

Preparation

First prepare the pasta: combine in flour processor the flour, 3 tablespoons of sugar, 1/8 teaspoon of salt, baking powder. Press 3 times.
Cut the half stick of butter in 5, add to the container and process until there are no large pieces of butter, like 15 seconds.
Add an egg and press as 10 times until the paste forms into a ball. Pass the dough to a floured surface and knead 3 or 4 times. Form a ball and then crush and refrigerate for one hour, wrapped in plastic.
When the dough is needed, remove from the refrigerator and knead with rolling pin to have a circle of 30 cm in diameter. Put in a greased pie mold, pressing a little. Trim the excess of the edges.

TIPS

You can make holes in the dough with a fork at the bottom. Use this recipe only for sweet cakes
