Preparation
Peel the pears, cut into small pieces and reserve; Boil in a pot with the wine and sugar for 2 or 3 minutes. Add the pears until they are barely cooked.
Remove the pears and continue cooking your syrup, add the long strips of husks for 5 more minutes. Remove the strips and pot from the heat.
Melt the lard in a saucepan, add the flour and stir for a few seconds, remove the heat and add the orange juice little by little, then the syrup reserving the strips well drained.
Stir over low heat until this cream boils a minute, warms and perfumes with vanilla essence.
Place on each crepe a pear and bring the edges of the dough up, tying together with the top of the pear with orange strips that will be softened with cooking and even tasty.
