Place in a saucepan 400 ml of milk to the fire along with the sugar, the vanilla, the cinnamon stick and the lemon peel to be infused. Meanwhile in a bowl we undo the cornstarch with the remaining 100 ml of milk. Little by little, incorporate the eggs in the bowl until you have a homogeneous mixture.
When the milk starts to boil, pour it over the saucepan of the egg and milk mixture, stir and pour again into the saucepan. Put to cook over low heat, stirring without stopping until it begins to thicken, at that time remove from heat.
Once warm pour in a bowl and cover with plastic wrap so that it does not condense and prevent crusting.
