Bean candy is very popular in Japanese cuisine. Although according to the online pastry course I took, this recipe is typical of northern Mexico. Try it and you'll see how rich it is.

Ingredients

12 portions
  • 1/2 kilos pinto beans
  • 1 liter milk
  • 1/2 kilos sugar
  • 125 milliliters Rum
  • 1/2 teaspoons baking soda
  • 1 clove
  • 1 orange

Preparation

Blend cooked and drained beans with 3 tablespoons of milk until uniform. Strain to separate the remains of shell.
In a pot, mix the bean dough with the rest of the milk, sugar, rum and orange juice. Heat until it starts to boil, moving constantly.
When it starts to boil, lower the flame over low heat.
When the rum alcohol evaporates, add the rest of the ingredients and simmer for about 1 hour.
Once you can see the bottom of the pot, the candy is ready!
Allow to cool to room temperature.

PRESENTATION

Serve alone or with a scoop of vanilla ice cream. You can also use this candy as a filling or to cover your favorite cakes.

TIPS

It can last up to 4 days in refrigeration.

en Agualeguas Nuevo León se hace el dulce de frijol parecido a este, pero lleva canela, creo no lleva los 4 ingredientes de abajo y se le puede poner nuez!
