Make this recipe and prepare delicious sweet macarons, you can make them in different colors and change the filling to whichever you prefer.

  • 1 egg, for macaroni
  • 40 grams almond flour, for macaroni
  • 95 grams powdered sugar, for macaroni
  • 15 grams refined sugar, for macaroni
  • food coloring gel, of 4 different colors for the macaroni
  • 2 tablespoons nutella, for the filling


Boil water in a large pot. Place a deep oven proof dish to whisk the mixture on bain marie (in a water bath) and beat the egg white with a balloon whisk until it is at room temperature (about 1 minute).
Remove the oven proof dish from the bain marie and beat the egg whites with an electric mixer until it is white and foamy. Add the refined sugar and beat until stiff (2 minutes more).
Separate the mixture in 4 equal parts and add on each one 1 drop or 2 of dye of different color, beat 1 minute more.
In another deep bowl, sift the almond flour and then the powdered sugar. Mix well and make sure there are no lumps.
Divide the flour mixture in 4 equal parts and add to each color 1/3 of the flour and sugar mixture and with a spatula of plastic mixed with circular movements. Repeat with another third of the flour and mix and finish with the last third. Just mix everything well to have a bright mass, the same for each color.
Place the 4 masses in a pastry bag with a small circular tip.
Prepare a tray with waxed paper and with the pastry bag you have small circles (2 cm apart). You should reach this mixture for approximately 16 macaroni (8 when the weapons in sandwich). Should be 4 of each color for when sandwich is done have 2 macaroons of each color.
Let the macaroni dry at room temperature for at least one hour. You know that they are already dry when you touch them with the tip of your finger and they already have a hard cover.
Heat the oven to 150 degrees centigrade and bake the macaroni for 10 minutes. Lower the temperature to 140 degrees and bake for 2-3 more minutes.
Remove from the oven and allow to cool 3-4 minutes and separate very carefully from the waxed paper.
Make the macaroni by adding a teaspoon of nutella between two macaroons.


You can put different fillings to the macarons.
