Cheesecake is a creamy dessert that can be made cold or hot and can be combined with different flavors, for example, this litchi cheesecake recipe. To prepare this dessert without an oven you need some practical Litita Vita + ® Cups, so it won't take you long to prepare it. Litchi is a fruit native to China, grown in different states in Mexico and is consumed in the summer season.

Ingredients

8 portions
  • 1 package cookie, ground integral, for the base
  • 90 grams butter, melted to the base
  • 1/2 cups honey, for the base
  • 3 packages Litchi Vita + ® Cups, 170 gc / u (litchi only)
  • 3 packages cream cheese, (190 g) for the cheesecake
  • 1 cup powdered sugar, for the filling
  • 2 cups whipping cream, for the filling
  • 3 envelopes gelatin, (7 gc / u) hydrated and melted, for filling
  • 1 1/2 cups raspberry, for mirror
  • 1 cup Litchi Vita + ® Cups, 170 gc / u (juice only)
  • 3 envelopes gelatin, (7 gc / u) for mirror
  • 2 cups Litchi Vita + ® Cups, (litchi only) to decorate
  • 1 cup raspberry, to decorate
  • mint leaves, to decorate

Preparation

For the base, mix the cookies, butter and honey in a bowl; form the base in a greased mold, refrigerate and reserve.
For the filling, blend the Vita + ® litchi Cups to form a puree. Then beat the cream cheese, the glass sugar and the litchi juice.
Beat the cream and add the litchi puree along with the cream cheese mixture. Add the grenetina in the form of thread and incorporate well. Pour into the mold on the base and refrigerate 2 hours.
For the mirror, blend the raspberry with the Vita + ® litchi Cups juice, then pour the grenetina into a thread until completely mixed. Reservation.
Empty the raspberry and litchi mirror mixture, and refrigerate for 2 more hours.
Unmold the cheesecake, decorate with raspberry and the Vita + ® litchi cups, serve.

PRESENTATION

Decorate with Vita + ® litchi Cups and fresh raspberries.

TIPS

It is important not to stop moving when the grenetina is added, so that lumps are not made in the mixture.
