Prepare this dessert without oven, with this No-Bake Lime Cake with Meringue that you can make with Marías cookies and cover with a delicious meringue.

Once you cover the cake with meringue, DO NOT refrigerate so that the meringue is kept in good shape. At the end, decorate with slices of lemon and a few Marias cookies.

Ingredients

8 servings
  • 5 cups of cream cheese
  • 2 cups of condensed milk
  • 3 tablespoons of lemon juice
  • 2 tablespoons of lemon zest
  • 3 packages of Marie biscuit 190g c/u (6.7 oz each)
  • 5 egg whites for the meringue
  • 1 1/2 cups of refined sugar for the meringue
  • enough of Marie biscuit mini, to decorate
  • enough of lemon yellow and green, cut into slices, to decorate,

Preparation

For the cream, beat the cream cheese with the condensed milk, the lemon juice and the lime zest until you obtain a smooth and smooth mixture.
In a round mold pan lined with plastic wrap at the bottom, leaving extra plastic on the sides, arrange a layer of cookies and cover with a little of the cream. Repeat the process until the mold is filled and have several layers. Refrigerate for 1 hour.
For the meringue, beat the egg whites until it doubles its volume. Sprinkle the sugar gently and beat until the meringue forms stiff peaks.
Unmold the round pan cover with the meringue making spikes with it, and caramelize the meringue slightly, and with a blowtorch on medium heat, taking care not to burn it.
Garnish with María cookies and limon slices. Enjoy
